Bitter and Sweet Ricotta Cake

This is not your typical Ricotta cheesecake, that’s why it looks more like a regular birthday cake in the outside. But the texture is pure smooth Ricotta inside. It takes only 4 ingredients. Yes, as you’ve heard! Super easy to make with almost no-prep time. You can get this in the oven in 10 minutes

Tools:
1 Big Bowl
1 Electric Hand mixer
1 9 -10″ Spring Foam mould with removable bottom
1 Oven

Ingredients:
2 Pounds Ricotta Cheese (drain it if necessary)
7 whole eggs
1 1/3 Cup Granulated Sugar
Butter to grease the mould
Orange Zest from 2 oranges

Procedure:
-Mix together the Ricotta Cheese, the eggs, the zest and sugar for around 10 mins in medium speed using your electric hand mixer
-Pour into your greased mould
-Bake in the middle rack of your oven at 425 F/ 220 C for 30 mins and then reduce the temp to 380F/ 190C for an extra 40 mins

*The cake might puff and smell like burnt, due to the caramelization process that happens on the top. That’s fine. It might as well crack on the top, and that’s also fine!

-Let come to room temp and serve (I love it with Greek Yogurt on the side or Sour Cream/ Créme Fraîche, etc. Something acidic would suit it well!
